Over-Stuffed Seafood & Veggie Omelet

Shrimp, Bell Pepper, Eggs, Onions, Zucchini

Chopped the veggies and added fresh chives, basil, parsley, cracked black pepper & salt to the eggs

Heated a little olive oil in the sautee pan and added the chopped veggies. I also added salt and pepper.

Those veggies look ready. We'll put those in a dish and place to the side

Sauteed the shrimp in a little olive oil

Gave them a rough chop

Whisked the eggs, chives, basil, parsley, salt & pepper with on teaspoon of water

Melted a pad of butter in a non-stick pan

And add our egg mixture

Cook while folding the edges in slightly and giving the pan a tilt round about to cook the eggs

Added those sauteed veggies

Next went on the shrimp
